Ingredients :
1/2 cup white sugar (100-200 gm)
4 tablespoons golden syrup or dark corn syrup
1 or 2 tablespoon baking soda
Method 1 :
1. Stir sugar and syrup together in a cold pan. Put over medium-high heat; from this point, do NOT stir, but only swirl the pan. Cook until golden and thick, and bubbles are beginning to mount.
2. Turn off heat and add baking soda. Whisk vigorously. Pour onto a silicone liner (Silpat) and let stand 15 minutes. Smash into large pieces.
Method 2 :
Grease a tin. Or use a piece of greased parchment/foil (that's what Nigella suggests). Stir the sugar and syrup together in a large saucepan, then bring to the boil. When it's a nice golden colour (a couple of minutes), take it off the heat and stir in the bicarb. It will whoosh up. Turn this golden cloud onto your greased surface and wait until it's set. Bash it up.
